There are few things I love more than cooking out and sitting in the sun with family and friends. I’ll admit that I love picnic food…a LOT! Hot dogs, baked beans, and mac and cheese- I am here. for. it. It is so easy to stuff myself full with foods I know aren’t doing much for me nutritionally, so this summer I’ve vowed to do myself a favor and be the person to bring a healthier side.
Behold- picnic perfect chickpea salad! This salad is easy to throw together quickly, is super cheap to make and is way more fun than your traditional side salad with iceberg lettuce.
Dressing Ingredients
3 Tbsp olive oil
3 Tbsp lemon juice (about a half of a lemon)
1 Garlic clove pressed or minced
Salt
Pepper
Salad Ingredients
1 English Cucumber halved and sliced
1 Can of chickpeas, drained and rinsed
1/2 Medium red onion thinly sliced
1 Avocado sliced
Cilantro chopped
Parsley chopped
4 oz Feta cheese, crumbled
Instructions
Combine the dressing ingredients in a small bowl: 3 Tbsp olive oil, 3 Tbsp lemon juice, 1 pressed garlic clove, 1/2 tsp salt and 1/8 tsp pepper and whisk to combine.
Combine remaining salad ingredients in a large bowl, add dressing and toss to coat.
Other tips:
If you like tomatoes, halve some cherry tomatoes and toss those in too. Remember to go easy on the cilantro, or skip it if it’s not your thing.
