Crock Pot Taco Soup

Ingredients

2 boneless, skinless chicken breasts

1 packet taco seasoning

4 oz cottage cheese

8 oz salsa (about 1 cup)

1 cup frozen corn

1 can black beans, drained and rinsed

Cooking Instructions

1. Place chicken breasts in the bottom of the crock pot.

2. Add taco seasoning, cottage cheese, salsa, frozen corn, and drained black beans.

3. Stir gently to combine ingredients around the chicken.

4. Cover and cook on low for 4–6 hours, until chicken is fully cooked and tender.

5. Remove chicken, shred with two forks, then return it to the crock pot and stir to combine.

6. Serve warm. Optional toppings: avocado, Greek yogurt, cilantro, or a squeeze of lime.
