Cucumber & Watermelon Salad with Feta, Mint & Lime

Ingredients

4 cups seedless watermelon, cubed (about ½ of a medium melon)

1 large cucumber, thinly sliced

¼ cup feta cheese, crumbled

¼ cup fresh mint leaves (or basil), chopped

Juice of 1 lime

2 tablespoons extra virgin olive oil

⅛ teaspoon sea salt

⅛ teaspoon black pepper

Optional: pinch of red pepper flakes or ¼ teaspoon finely diced jalapeño

Cooking Instructions

1. Prepare the produce: Cube the watermelon and slice the cucumber thinly (peeled or unpeeled).

2. Toss the base: In a large salad bowl, combine watermelon and cucumber.

3. Mix the dressing: In a small bowl or cup, whisk together the olive oil, lime juice, salt, pepper, and optional red pepper flakes or jalapeño.
