Fully Loaded Baked Potato

Ingredients


  • 1 whole small baked potato

  • 6 oz fat free cottage cheese

  • 1/2 cup pico de gallo

  • 1/4 cup Green Onion

Cooking Instructions


  1. Poke holes in potato before baking in microwave until cooked through (5-10 minutes).

  2. Slice open and top with cottage cheese.

  3. Pop back in microwave or broiler for 1 minute for melted cheese.

  4. Once cooked, top with pico de gallo and green onions for a quick lunch or dinner!
