Maddy’s Homemade Cava Bowl

Ingredients

Bowl:

1lbs chicken breasts
2 cups dry white rice
1 red pepper
1 green pepper
1 yellow onion
1 avocado
1 cup feta cheese
1 large cucumber
1/2 tsp lemon seasoning
1 tsp minced garlic
2 tbsp extra virgin olive oil

Dressing:

1 tbsp white wine vinegar
1 tbsp water
2-3 tbsp extra virgin olive oil
1 package Good Seasons Italian Dressing Powder

Cooking Instructions


Cook rice in rice cooker or large pot
Cube chicken
In a medium sized pan, add cubed chicken, lemon seasoning, minced garlic & olive oil
Cook over medium heat until chicken in white all the way through, stirring occasionally
Dice onion
Slice peppers
Dice cucumber
Dive avocado
In a small bowl, add vinegar, water, olive oil and then seasoning packet. Stir well.
Once rice and chicken are finished cooking, divide into 4 containers (if meal prepping) or bowls (if eating immediately) and evenly divide raw onions, avocado, peppers, cucumbers, feta and dressing into each bowl.
