What We’re Making:
🍍 Pineapple BBQ Chicken – juicy chicken breasts baked in a zesty homemade pineapple barbecue sauce with colorful peppers and a touch of heat from jalapeño.
Ingredients You’ll Need:
- 4 skinless, boneless chicken breasts
- 2 cups pineapple chunks
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- Coarse salt and freshly cracked black pepper, to taste
For the sauce:
- ½ cup of your favorite BBQ sauce (we recommend Primal Kitchen BBQ Sauce for a no-sugar-added, paleo-friendly option)
- 3 garlic cloves, minced (or 2 tsp dried garlic)
- 1½ tsp smoked paprika
- 2 tbsp olive oil
- 1 jalapeño, sliced
- 2 tbsp fresh lemon juice
- 1 tsp dried oregano
- Chopped cilantro, to taste
