1. Make the cookie cake layer:
2. Preheat the oven to 350 degrees.
3. Combine the eggs, coconut sugar, coconut oil, and vanilla and beat until very smooth.
4. In a separate bowl, combine all the dry ingredients, then slowly beat into the wet picture to form a sticky dough.
5. Stir the chocolate chips in, and using a watermelon scooper or your hands, form 1.5″ dough balls and place on a parchment lined baking sheet.
6. Flatten with a spoon or fingers and bake for 8 minutes.
7. Let cool and enjoy!
