Paleo Buns
2 cups almond flour
½ cup tapioca flour (or arrowroot flour)
½ tsp sea salt
½ tsp baking soda
½ tsp baking powder
1 tsp apple cider vinegar
3 large eggs
1 tbsp honey
2 tbsp coconut oil, melted
Sloppy Joe Filling
1 lb ground beef (or ground turkey)
1 tbsp avocado oil (or coconut or olive oil)
1 small onion, minced
2 tbsp ketchup (for strict paleo, use Primal Kitchen ketchup)
2 tbsp yellow mustard
1 tbsp coconut aminos
6 oz tomato paste
1 tsp salt
1 tsp black pepper
1 tsp minced garlic
1 tsp dried oregano
Paleo Buns
1. Preheat oven to 350°F and lightly grease a baking sheet.
2. In a large bowl, combine almond flour, tapioca flour, salt, baking soda, and baking powder.
3. In a separate bowl, whisk together eggs, apple cider vinegar, and honey.
4. Add wet ingredients to dry ingredients, then stir in 1 tbsp of the melted coconut oil.
5. Using greased hands, form dough into 4 buns and place on the prepared baking sheet.
6. Lightly brush each bun with the remaining melted coconut oil.
7. Bake for 12–15 minutes, or until set and lightly golden.
8. Allow buns to cool before slicing.
Sloppy Joe Filling
1. Heat avocado oil in a large skillet over medium heat.
2. Add minced onion and sauté for 3–4 minutes, until softened.
3. Add the minced garlic and cook for 30–60 seconds, stirring frequently, until fragrant.
4. Add ground beef (or turkey) and cook until browned, breaking it up as it cooks.
5. Optional: Drain excess fat from the pan if desired, then return meat to the skillet.
6. Add ketchup, mustard, coconut aminos, tomato paste, and seasonings.
7. Reduce heat and let simmer for 5 minutes.
8. Serve the Sloppy Joe mixture on the paleo buns and enjoy.
