1.5 lb boneless, skinless chicken breast
1 medium yellow onion
1 cup cherry tomatoes
1/4 cup balsamic vinegar
2 cloves garlic, minced
1 tbsp Dijon mustard
salt and pepper to taste
1. Add chicken, onions, and tomatoes to slow cooker.
2. Combine remaining ingredients in small bowl. Whisk together and pour over chicken. Stir to combine.
3. Cover and cook chicken for 4 hours on high or 6 hours on low.
4. Shred and serve immediately.
