• 4 cups fresh spinach or mixed greens
• 1 cup sliced strawberries
• 1 cup snap peas, chopped
• 2–3 radishes, thinly sliced
• ¼ avocado, sliced
• 2 tbsp chopped pecans or walnuts
• 2 grilled chicken breasts, sliced (optional for extra protein)
• 1 tbsp feta or goat cheese (optional)
For the dressing:
• 2 tbsp olive oil
• 1 tbsp fresh lemon juice
• 1 tsp Dijon mustard
• 1 tsp honey
• Pinch of sea salt + black pepper
1. Add greens, strawberries, snap peas, radishes, avocado, and nuts to a large bowl.
2. Whisk together dressing ingredients until smooth.
3. Toss salad with dressing and top with grilled chicken if using.
4. Finish with a sprinkle of cheese for extra flavor.
