Chipotle Sweet Potato Chicken Meatballs
Spicy and flavorful meatballs that are perfect for meal preps, and freezer-friendly!
- 1 lb ground chicken (may substitute turkey)
- 2 cups sweet potato (grated)
- 2 tbsp tapioca flour
- 2 tbsp onion powder
- 2 tbsp olive oil
- 1-2 tsp chipotle (seasoning)
- 1 tsp garlic powder
- 1 tsp salt
Preheat oven to 400*F.
Line a baking tray with parchment paper.
In a large bowl, combine ingredients, then form small/medium meatballs and place on baking tray.
Bake for 15 minutes, then turn meatballs and cook for another 5 minutes, unitl golden brown and fully cooked.
