Ingredients

  • 6 TBSP coconut oil melted
  • 1 whole egg
  • 1 tsp vanilla extract
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp all spice
  • 1/2 tsp salt
  • 4 cups sweet potato cooked and peeled
  • 1/3 cup dark chocolate chips

Instructions

  • Preheat oven to 350*F
  • Combine all dry ingredients in a large mixing bowl and stir.
  • Add in all wet ingredients including peeled and cooked sweet potatoes and stir well until batter forms.
  • Evenly distribute batter into a greased muffin pan.
  • Bake for 45-60 min or until cooked all the way through.
