Coconut Lime Energy Bites

- 1 cup raw cashews
- 2/3 cup unsweetened shredded coconut (fine)
- 1 cup packed pitted dates (soak in warm water first if very dry)
- 2 tbsp fresh lime juice
- 1 tsp fresh grated lime zest
- Place the cashews in a food processor and mix until well chopped.
- Add the dates and mix in the food processor until a dough forms.
- Add the coconut, lime juice and lime zest and process until well mixed.
- Roll dough into balls and enjoy!
Store in the fridge for 5-7 days
