Combine all ingredients into a pot and bring to a boil. Salt and pepper to taste and serve immediately or store. Serve with garnish of choice. Fresh avocado, lime, cilantro, jalapeños, green onions, sour cream and crushed chips are some of my go to favorites but get creative!
This soup can be made in advance and left in a crockpot for hours, or whipped up and ready to eat in 15 minutes. It also makes for a great “empty the fridge” soup and tastes great if you add additional veggies, mix up the beans, bump up the spice with a variety of peppers! One of my favorites, because the options are nearly limitless and it’s easy to make!
