Avocado Deviled Eggs
Ingredients
6-8 hard boiled eggs
1 avocado
1/3 cup sour cream
1/2 of a lime
1/2 teaspoon salt
1/8 teaspoon black pepper
paprika
Cooking Instructions
1. Boil and Peel Eggs. Discard shells.
2. Cut boiled eggs in half and put the yellow yolk into a food processor and the white halves onto a plate.
3. Add 1 avocado, sour cream, juice of half a lime, salt and pepper into the food processor.
4. Process egg mixture for 20 seconds and then scrape down the sides of the bowl.
5. Process for another 20 seconds making sure yolk and avocado is smooth and creamy.
6. Place a large tip into a disposable piping bag and fill the bag with the filling.
7. Pipe avocado egg into the boiled egg white shells center.
8. Sprinkle with paprika and add a bit of crispy bacon on top.
9. Makes 12-16 deviled eggs.
