1 cup raw cashews
2/3 cup unsweetened shredded coconut fine
1 cup packed pitted dates soak in warm water first if very dry
2 tbsp fresh lime juice
1 tsp fresh grated lime zest
Cooking Instructions
Place the cashews in a food processor and mix until well chopped.
Add the dates and mix in the food processor until a dough forms.
Add the coconut, lime juice and lime zest and process until well mixed.
Roll dough into balls and enjoy!
