Grilled Salmon Burgers with Avocado Salsa

Ingredients

Salmon Burgers

1 lb salmon fillet
1/2 cup panko bread crumbs- may substitute almond meal, whole oatmeal, cooked quinoa or couscous
1 egg
2 green onions chopped
1/2 poblano pepper seeded and chopped
1 tbsp lemon juice fresh, may substitute lime juice
1/2 tsp salt
1/4 tsp pepper

Avocado Salsa

1 large avocado ripe; peeled, seeded and chopped
1/2 poblano pepper seeded and chopped
2 green onions chopped
1 tbsp lemon juice fresh; may substitute lime juice
1/4 tsp salt
1/4 tsp pepper

Cooking Instructions


Skin and chop salmon fillet.
Put salmon in a large bowl and add panko, poblano, egg, green onion, lemon or lime juice, salt, and pepper.
Mix well.
Heat indoor grill pan or outdoor BBQ to medium-high heat.
Form 4 salmon burgers.
Cook burgers for about 4 minutes on each side until cooked through.
For the avocado salsa, combine all ingredients in a medium bowl.
Top burgers with salsa and serve with or without a bun, enjoy!
