1 lb carrots, peeled and cut into sticks or left whole if small
2 tbsp olive oil
1 tsp dried thyme
1 tsp dried rosemary
½ tsp garlic powder
Salt and pepper to taste
Optional: 1 tbsp balsamic glaze for drizzling
Preheat oven to 400°F (200°C).
Toss the carrots with olive oil, thyme, rosemary, garlic powder, salt, and pepper in a large bowl.
Spread the carrots on a baking sheet in a single layer.
Roast for 20-25 minutes, stirring halfway through, until tender and slightly caramelized.
If desired, drizzle with balsamic glaze before serving.
