Preheat oven to 350 degrees. Line a 6-cup muffin pan with liners and lightly grease or spray them with cooking oil.
Combine eggs, pumpkin puree, coconut oil, and vanilla extract in a medium mixing bowl.
Mix coconut flour, brown sugar, baking powder in a small bowl.
Slowly mix together both bowls of ingredients. Stir until thoroughly mixed.
Use 1/4 cup measuring cup to scoop the batter into each of the muffin cups. Top off any muffins with the remaining batter.
Bake for 25 minutes.
Remove muffins from the pan and cool on a wire cooling rack.
