Maple Bacon Butternut Squash

Ingredients


Butternut Squash (cubed), I use 1 package of the pre-cut butternut squash from Trader Joes
Turkey or Regular Bacon (4-6 strips)
Maple Syrup (1 tbsp or to taste)
Cinnamon (1 tsp or to taste)

Cooking Instructions

1. Spray cast iron (or regular) pan with olive oil and add your turkey bacon
2. While the turkey bacon is cooking, add your butternut squash to air fryer (you can also use oven but air fryer is faster!). Cook butternut squash for 13-15 minutes on 375.
3. Once the turkey bacon is browned on both sides, take it out of the pan and cut into cubes
4. Add your butternut squash to the cast iron pan to soak in the turkey bacon grease for flavor
5. Add back in your turkey bacon to the pan
6. Add maple syrup & cinnamon to pan and stir well
7. Roast it all up and enjoy!
This recipe is my new Fall favorite! I was cleaning out my fridge recently and all I had was butternut squash and turkey bacon. With it being Fall and all, I decided to top my turkey bacon and butternut squash with maple syrup and cinnamon — who knew it was so delicious. The best part is, it’s simple to make and it can really be paired with anything. You can also add your own twist on the recipe and make it with regular bacon and ground turkey like our corporate wellness director, Michelle!
