Colorful healthy Chickpea Salad

Mediterranean Chickpea Salad

Ingredients

-1 large cucumber

-1 firm avocado

-1 cup chopped cherry tomatoes

-2 cans of chickpeas

-1/4 tsp cumin

-1/4 tsp garlic powder

-1/2 tsp paprika

-2 tbs olive oil

-4 oz of feta or goat cheese

Dressing

-3 tbs balsamic vinegar

-3 tbs olive oil

-1/8 tsp salt

-1/8 tsp black pepper

-pinch on red pepper flakes

-pinch of oregano

-3 cloves of garlic

Cooking Instructions

1. Preheat oven or air fryer to 400 degrees

2. Drain and rinse your 2 cans of chickpeas and lay them out in a pan and season with cumin, garlic powder, paprika, and olive oil

3. Air fry for 12-15 minutes, shaking a couple times or bake 20 minutes in the oven until crispy

4. While your chickpeas are cooking, dice the cucumber into cubes and add that to a large bowl along with one avocado cubed, and chopped cherry tomatoes

5. For the dressing, add all the ingredients to a small bowl and mix

6. Once the chickpeas are nice and crispy, add them to your large bowl and mix in the dressing along with feta or goat cheese and enjoy!
