1 lbs ground turkey lean
4-6 pieces romaine large, taco ‘shell’
1 cup brown rice (uncooked)
1/2 cup pico de gallo
1/2 tsp cayenne pepper
1.5 tsp garlic powder
1.5 tsp chili powder
1.5 tsp onion powder
Brown Rice
Place 1 cup brown rice and 2 cups water into sauce pan over medium-high heat.
Bring to a boil and then reduce heat to low. Let simmer for 45 minutes.
For Taco Meat
Mix turkey with spices and saute over medium heat.
Once turkey is cooked through, in a large bowl mix together rice, pico de gallo.
Plate into romain lettuce “shells”.
Let cool and enjoy!
