Paleo Banana Muffins

  • 4 banana (ripe, mashed)
  • 3 egg
  • 3 TBSP coconut oil
  • 1 tsp vanilla
  • 1/3 cup almond butter
  • 1/3 cup coconut flour
  • 1 tsp ground cinnamon
  • 3/4 tsp baking soda
  • 3/4 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup dried blueberries (optional)
  1. Preheat oven to 350*F
  2. In a large bowl mix all ingredients
  3. Divide batter evenly throughout 12 greased muffin cups
  4. Bake for 16-18 min
  5. Let cool & enjoy!
