Paleo-Friendly Fudge Brownies
These brownies are so tasty, it's hard to eat just one!
- 1/2 cup coconut oil (melted)
- 1 cup coconut sugar
- 2 whole eggs
- 2 tsp vanilla extract
- 1/2 cup tapioca flour
- 1/3 cup cocoa powder (unsweetened)
- 3 oz dark chocolate (chopped, try Endangered Species Natural Dark Chocolate for a dairy free, paleo friendly option!)
Preheat oven to 350*F and grease or line an 8×8 inch baking pan.
Mix the melted coconut oil and coconut sugar in a mixing bowl until combined.
Mix in the eggs and vanilla extract.
Add tapioca flour, cocoa powder and chopped chocolate. Fold in chocolate.
Pour batter into prepared baking pan and spread evenly.
Bake for 20-22 minutes.
Remove from the oven and let cool completely before cutting!
