Paleo-Friendly Fudge Brownies

These brownies are so tasty, it's hard to eat just one!

  • 1/2 cup coconut oil melted
  • 1 cup coconut sugar
  • 2 whole eggs
  • 2 tsp vanilla extract
  • 1/2 cup tapioca flour
  • 1/3 cup cocoa powder unsweetened
  • 3 oz dark chocolate chopped, try Endangered Species Natural Dark Chocolate for a dairy free, paleo friendly option!


  • Preheat oven to 350*F and grease or line an 8×8 inch baking pan.
  • Mix the melted coconut oil and coconut sugar in a mixing bowl until combined.
  • Mix in the eggs and vanilla extract.
  • Add tapioca flour, cocoa powder and chopped chocolate. Fold in chocolate.
  • Pour batter into prepared baking pan and spread evenly.
  • Bake for 20-22 minutes.
  • Remove from the oven and let cool completely before cutting!
