Paleo Zuppa Toscana

  • 4 cups chicken stock
  • 4 whole Italian Chicken Sausages (From Trader Joe’s Spicy )
  • 3 cups kale (chopped)
  • 1/2 whole onion (diced)
  • 1 bag small tri-color potatoes (from Trader Joes)
  • 1 can low fat coconut milk (refrigerated)
  • salt
  • Pepper
  1. Cut chicken sausages into small pieces and brown on stovetop for 8-10 minutes
  2. Chop small potatoes into halves then add into crockpot with diced onion and chicken stock
  3. Add the cooked chicken sausage into crockpot and set the crockpot on low for 8 hours
  4. Add the kale into the crockpot and cook for another 30 minutes on low
  5. Before eating, add the thickened portion of the coconut milk to the crockpot and stir (you can save the rest of coconut milk for another use)
  6. Add salt and pepper to taste and enjoy!
