Paleo Zuppa Toscana
- 4 cups chicken stock
- 4 whole Italian Chicken Sausages (From Trader Joe’s Spicy )
- 3 cups kale (chopped)
- 1/2 whole onion (diced)
- 1 bag small tri-color potatoes (from Trader Joes)
- 1 can low fat coconut milk (refrigerated)
- salt
- Pepper
- Cut chicken sausages into small pieces and brown on stovetop for 8-10 minutes
- Chop small potatoes into halves then add into crockpot with diced onion and chicken stock
- Add the cooked chicken sausage into crockpot and set the crockpot on low for 8 hours
- Add the kale into the crockpot and cook for another 30 minutes on low
- Before eating, add the thickened portion of the coconut milk to the crockpot and stir (you can save the rest of coconut milk for another use)
- Add salt and pepper to taste and enjoy!
