The Perfect (Healthy) Pizza for Your Summer Cookout

This raw, vegan dessert pizza looks so festive with its red, white, and blue, and will absolutely be a crowd pleaser at your cookout parties. Or just to make and enjoy on a hot summer day since its best served nice and cold! It’s loaded with nutrient-dense ingredients, but you’d never know by eating it.

This “healthified” version of a fruit pizza is made with a few simple whole food ingredients like walnuts, dates, coconut, a touch of maple syrup, and berries.

It starts with a crust that’s like a big chewy cookie, then it’s filled with a thick frosting ‘sauce’ made with canned coconut milk, and topped with your favorite seasonal fruits like raspberries, blueberries, kiwi, dragon fruit, grapes, and blackberries. This recipe is raw, vegan, paleo, vegetarian, gluten free, and dairy free.

  • 1 cup dried unsweetened shredded coconut
  • 1 cup raw walnuts
  • 6 Medjool dates, pits removed
  • 1/4 teaspoon sea salt
  • 1 tablespoon coconut oil, melted
  • 1/2 teaspoon vanilla extract


  • 1 can full fat coconut milk
  • 1-2 tablespoons pure maple syrup or local honey
  • 1/2 teaspoon vanilla extract
  • Your favorite fruit, bite-sized pieces


  • Add all crust ingredients to a food processor, and process until sticky dough form.
  • Line a large plate with parchment paper.
  • Ball the dough together, and mold into a large, flat circle (similar to pizza crust) on the parchment lined plate. Press firmly, it’ll be about 1/4″ think
  • Place crust in freezer to set while you make the sauce.
  • SAUCE >> Chill the can of full fat coconut milk in the fridge for at least 24 hours.Open the can and scoop the solid white coconut cream into the bowl, along with the other 2 ingredients. Using an electric hand mixer or a stand mixer with the whisk attachment, beat the cream until fluffy and smooth, ~2 minutes. (You’ll have leftovers!)
  • Top with your favorite fruit pieces.
  • Eat with pleasure.
